Just what IS a Meat Analogue (Seitan)?


Seitan is is often called 'wheat meat' or the vegan meat substitute.  It is pronounced as 'SAY-tan' and has been used for centuries in Buddhist tradition and adopted in many Eastern countries like Japan, China and more.  Buddhist monks have been credited for it's invention and stories abound on it's history. Suffice it to say that it is a form of vital wheat gluten and is prepared in a variety of ways, methods and techniques.


Although it is made from wheat, seitan has little in common with flour or bread. Also called “wheat meat”,  seitan becomes surprisingly similar to the look and texture of meat when cooked, making it a popular meat substitute. Seitan is also high in protein, making it a popular protein source for vegetarians and vegans alike. 


We suggest using seitan and meat analogues as 'transition' foods to help people migrate away from their meat based diets.  Making your own seitan is more cost effective and healthier than store bought varieties (with preservatives and other stuff).  They provide a great way to enjoy 'meat' the way you were used to but the variety of Plant Based Cuisine is so varried and delicious we hope you don't over use seitan.


You can purchase seitan and various varieties from large number of companies and all have various recipes, flavors and textures.  Here we will use Chef Skye Michael Conroy's cookbook: The Gentle Chef Cookbook.  As in our Plant Based 'Cheese' Class, we will provide you with your very own copy of this terrific cookbook to add to your collection.


Making Seitan


Over the past five years, Chef Nancy has experimented with a variety of Seitan recipes. You can purchase seitan in various stores from many different companies.  It can be quite expensive; especially when you figure it is made from vital wheat gluten flour.  The packages are small and many are highly processed.


Making your own Seitan, is not only delicious, nutritious and easy; it is Cheaper too!  Seitan can be made into a 'beef roast', chicken, turkey and yes, even an Easter Ham! We have tried and enjoyed them all.


Hot dogs for the BBQ, sure, they are fantastic as are the breakfast sausages.  Of all the recipes, Nancy has prepared Chef Skye Michael's versions for texture and flavor.


You will never go without your favorite 'meat' for any occasion!
